From Farm to Table: Our Journey with Seasonal Eating

Eating with the seasons isn’t a trend for us at Bilva Farms — it’s simply how the land invites us to live. Seasonal produce is fresher, more flavourful, and often more nutrient-dense because it is harvested at its natural peak and doesn’t travel long distances to reach your plate. It also supports local ecosystems, reduces food miles, and keeps us closely connected to the rhythms of our soil and climate.

On our farm, summer is a riot of colour and fragrance. Mangoes, jackfruit, water apples, cherries, and jamun fill our trees and baskets — ready to become thick mango milkshakes, jackfruit curries and payasam, crunchy water apple salads, simple cherry bowls, and jamun sherbets that stain the tongue a deep purple. In the early to late monsoon, avocadoes, guava and sapota take centre stage, finding their way into fresh fruit plates, chutneys, jams, and slow-simmered desserts. Come winter, it is the turn of our rice and grains, forming the warm, comforting base for everyday meals that feature whatever the season is offering that week.

Seasonal eating, for us, is not about restriction but about abundance — accepting what nature is ready to give, when she is ready to give it, and bringing it to your table with as little interference as possible.
